Now just imagine an Irish elk (http://en.wikipedia.org/wiki/Irish_Elk) or a tusky prehistoric boar taking a drink at dawn as your character wanders across the countryside.

Fantastic view. The Demetanician highlands are so varied and central to the Holorian city states you can do so much with them. There should ideally be horse herds in the region, cities, towns, farms, villages, vineyards, villas and so forth. This is basically the Tuscany of Holoria.
